Whether you are celebrating a birthday or the end to a long week, there’s no better way to cool off this summer than with a yummy cocktail and your roomie. Here are a few recipes for the perfect summer cocktails for two.

Beer Floats

This ice-cream-float-style beer cocktail offers the perfect summer drink. First, create the perfect slushy ice base for your cocktail by mixing together 3/4 cup of sugar and 3 cups of water in a small pan and bringing to a boil until sugar is dissolved. Let this cool for one hour and mix in 1 1/2 cups of lime juice and 1 tsp of lime zest. Pour into a pan and freeze. Every thirty minutes or so, stir the mixture with a fork so that it freezes in a loose, slushy state. Once ready, fill a glass 2/3 of the way up with the slushy mix and pour over the summer beer of your choice. Top it off with a splash of pineapple juice, a lemon and you are ready to go!

Mixed Berry Wine Slushies

This wine twist is perfect for any girls night! Take one bottle of Pink Zinfindel wine and one cup of mixed berries. Combine the ingredients in a blender and purée them. Strain the contents of the blender over a cake pan and freeze. Every thirty minutes or so, use a fork to stir and separate lumps in the mixture. Separate into 2-4 glasses and garnish with a few fresh berries or mint.

Bourbon Slush

This easy twist on a classic will please any summer guest. Simply brew 1/2 cup of black tea and steep for 5 minutes. Then, stir in 1/2 cup of sugar and stir until completely dissolved. Let that cool and add 2 cups of orange juice, 2 cups of lemonade and one cup of your favorite bourbon. Pour the mix into a large pan or ziplock bag and freeze for several hours until firm. Use a fork to break up the slush and serve freezing cold with a pineapple garnish.
