If you’re a fan of burgers, beer and old-school arcade games, Geoff Lockert is your guy. The proprietor of popular Birmingham restaurant and bar Paramount knows how to make food fun. He dishes on what brought him downtown and the importance of salt.

When you were looking at spaces for a restaurant, what made you pick downtown Birmingham?

We picked downtown seven years ago. Our first restaurant, Trattoria Centrale, was focused on breakfast and lunch. The main reason we picked downtown was the built-in customer base. We noticed prior to signing a lease that at about 11:30, the streets filled with people wanting lunch. I guess, in the end, it was lower risk.

Do you have a favorite menu item at Paramount?

I think the wings rock.

What do you think makes a good meal?

A good meal is predicated on proper seasoning. Salt makes everything taste better.

How did you choose the beers for Paramount?

My business partner Ben does all the beer ordering. He tries to keep a rotating selection of well-made craft beers. He’s always changing things up.

What is your favorite part of being downtown?

My favorite part of downtown is the community and relationships we build everyday. It’s small enough that you really get to know a lot of people.

Paramount is open Tuesday through Sunday from 11 am until close. The crowd goes 21+ after 9 pm.
